Pulled Pork Chilaquiles

If you miss corn chips, these Siete cassava chips are a game-changer! They're so good with guac or salsa and they're the perfect base for some paleo chilaquiles. Breakfast for dinner, anyone? This is a 30 minute meal (more like 10) if you make the pork in advance!


  • Instant Pot Roasted Verde Pulled Pork (suggested: make ahead for more flavor and to save time)
  • Free Range eggs
  • Whole Foods 365 Roasted Verde Salsa (or other Roasted Verde Salsa of choice)
  • Siete Cassava Chips, Sea Salt (available at Whole Foods)
  • Avocado, chopped

Prepare eggs as desired (I love them over easy). Fill plate with Siete chips. Top with pulled pork, eggs, avocado, and salsa. Enjoy!
